Lately I’ve been noticing my coffee hasn’t been tasting quite right. I don’t have any first hand experience with the taste of cardboard, but I suspect it’s just like my coffee had been tasting.

I cleaned my coffee maker with vinegar and water but that didn’t help. I was also suspicious about the new coffee filters we had purchased recently, so I went out and bought some of the kind we usually bought. Sure enough that was it, sure, they only cost a third of what we normally pay for premium paper filters but what they did to the taste of my coffee should be outlawed.

The majority of at home coffee drinkers use a drip coffee machine. The coffee grinds are contained in a basket or cone shaped filter. Most of us don’t give a second thought about the quality of the filters that we are using.

I’ve always wished I could make coffee at home like the local coffee shop I go to on the way to work. A great filter for your drip machine isn’t going to single handedly turn you into an gourmet coffee barista, but it could make a big improvement.

Paper Filters

The most common filter used in households today is the paper filter. This is a no mess way of making coffee. Just lift the paper filter out along with the coffee grinds and dispose of it. The whole mess is even compost friendly. Paper filters stop any sediments from passing through. They also prevent most of the coffee oils from passing as well. This results is a smoother, weaker tasting coffee. Not all paper filters are created the same. Different pore sizes will allow more or less oils pass through. There is a danger of passing a paper taste on to the brew though.

Cloth Filters

Cloth filters are usually made of unbleached cotton. They allow more of the coffee oils to pass through which results in a stronger cup of coffee, but without letting the grinds and sediment pass through. A cloth filter will typically last several months with proper care. It is the care and cleaning that makes these an unpractical choice for the majority of households.

Plastic Filters

Basket and cone shaped plastic filters are made to most coffee machines. They have a plastic mesh that prevents grinds and sediments from passing into the pot. They must be cleaned out after every use. Coffee oils can tend to build up and stain the plastic over time. Some people suspect that the plastic or build up affects the flavor.

Stainless Steel Filters

Similar to the plastic filters, stainless steel filters will last for years with proper care. These are often called gold tone filters as they have been colored gold. They are more durable than plastic filters and easier to clean, in fact you can place these filters in your dishwasher. A cleaner filter means better coffee. These metal filters will allow the coffee oils to pass through, and even some of the finer sediments. This will result in a stronger cup of coffee with more body.

Gold Filters

Gold filters are Stainless Steel filters with a gold plating on them – usually 23k. Their main benefit is that the filter will not pass any taste onto the brew. This sounds extravagant and people sort of look at my sideways when I bring it up, but they becoming more popular in high end coffee machines.

Whatever type of filter you choose, spend the money on a good filter. I have thrown out the cheap no name filters and am using a natural brown basket filter. I tried the plastic filters and found that they clogged. In the end, the convince of paper won out.

People often write to me on how to set up a coffee shop in their church or next door to their church. Seems like a great idea and great concept. And everyone loves coffee. How easy could it be. And it will build fellowship and worship. But here are the mistakes one can make in setting up a church coffee shop or any coffee shop. And since you may be making a huge investment – some study and time should be spent.

Your Coffee shop investment will vary greatly depending on your chosen location and existing conditions. Some churches buy a coffee maker for $100 and the shop is open. We are excluding them. The coffee shop equipment that you will need will be approximately $12,000 to $15,000, or $150 for a simple top of the line coffee maker. Plus then the remodeling cost, decor, signs, furniture, fixtures etc. may range from $40,000-$400,000. Some churches have invested from a low of $3,000 to $220,000 to set up their church coffee shop. As an comparison, Starbucks invests on the average of upwards of $300,000 plus to open one of their shops. And hopefully your church is getting volunteers to help.

Here are the most common mistakes I see in setting up a church coffee shop – off the church grounds.

1. Starting to spend your money and your time without first determining if your project makes any business sense in the first place. And if your goal is to build worship then the numbers won’t tell the whole story. But many coffee shops are also looking to have it break even or as a fund raiser for missions or children.You won’t learn that from your friends, relatives or your coffee/equipment dealer!

2. Choosing the wrong location – if you are not visible, hard to get to, or in the wrong demographic area, you do not exist and probably will have very little business! The main reason for Starbucks success is the locations! And use your church to market and cross brand and use your church base to build your coffee shop.

3. Naming your shop with a name unrelated to your coffee business – you are driving along and notice a shop called Dottie’s. Would you stop there for a cup of coffee if you did not know what it was? So don’t get too cute or too themey – let people know what you are doing – serving coffee.

4. Not knowing which design or layout or how to design your work environment for speed and efficiency of operation – but also your design must allow and convey the right environment. Small groups and bible studies? and how do they interact with your other customers.

5. Having a menu that is too short or too long and confusing, the wrong food or no food or not focusing on items that matter the most. The food must match your theme and your coffee must match your crowd and purpose.

5. Music and what type of music and when is it played. Does it set the environment or not used at all. Do you use bands to draw crowds or drive off customers.

6. Poorly trained employees with no idea on how to prepare coffee and espresso based drinks properly and promptly. Not enough employees? Do you use volunteers? How much can you afford? And lastly what are your hours of operations?

7. Trying to do too much. Coffee shops environments are made over time with the right blends of service; worship and people. Not try and force the issue.

Ready to start? Plan and pray and spend some time picturing your coffee shop 1 year from now. How does it feel and smell and sound? Who are your customers and what are they saying? Pray some more.

You will also find that the grounds are now filtered through paper so that you can have the great taste of coffee, but you don’t have to worry about the grounds in the cup. You will also notice that coffee is now served in a nice glass pot.

If you don’t want to measure out the grounds, then you can always get pre-measured packets and slip it into the coffee maker. You will want to make sure that you watch your mouth with freshly brewed coffee. You may not know this, because coffee comes out of the make at least 200 degrees F.

Now today, we don’t just have coffee. You also have something known as the espresso. The espresso is actually from the European culture and it has now begun to work through American society. You will find that it is made within minutes and you use finely chopped dark coffee beans. It is extremely strong coffee. It has a very strong aroma, but it is a wonderfully delicious drink.

If you would take espresso and then add steamed milk, then you will have a cappuccino or latte. You will want to consider the difference between the two is simply a change in milk to coffee ratio. You will find that there is definitely an improvement on the taste of old world coffee.

There are also a lot of methods that you can use to make coffee. The first is the French plunger where there is a rod in a glass pitcher. This is used so that you can get a very dark and few flavored drink. There is also something known as the vacuum brewer. This method works great for a dinner party. Then there is the old world way to making coffee. It is known as the Ibrik. This is where you heat water in a brass or copper container. The coffee and the water are heated together. It is then poured and filtered. This is a very strong version of coffee.

You will want to consider producing a delicious cup of coffee each time because of all the love and hard work that was put into making that single cup. You have to consider the fact that the history of coffee tends to make it taste even better.
